Lemon Tea Cake Recipe

Here is a recipe to make a simple lemon tea cake:

* Lemon rind, 1 tablespoon finely grated

* Flour, 200g of plain and 150g of self-raising

* Butter, 150g melted and cooled

* Caster sugar, 285g

* 3 eggs

* Freshly squeezed lemon juice, 125ml

* Pure icing sugar, 150g sifted

* Milk, 100ml

Preheat the oven to 180 degrees Celsius. Melt some butter and use it to brush a bundt pan that measures 22cm on top. Sift the combined flour inside a bowl and stir in the caster sugar. Create a well in the middle and then whisk the eggs, butter, lemon rind, milk, and lemon juice until everything combines.

The next step is to add the lemon mix to the flour and stir well. Spoon the mixture into the pan and then smooth off the surface. This should bake for forty to forty-five minutes. Turn it on a wire rack in order to cool completely.

The last step is to put the cake on your serving platter. You would then mix the icing sugar and the rest of lemon juice inside a small bowl and spoon over the cake. Use zested lemon rind to decorate.
